Wild Rice Pilaf with Pumpkin Seeds
Ingredients:
- 1 cup wild rice
- 2 cups water
- 2 tablespoons olive oil
- 1 small onion, diced
- 1 clove garlic, minced
- 1/4 cup pumpkin seeds
- 1/4 cup dried cranberries
- Salt and pepper to taste
Instructions:
- Rinse the wild rice in cold water and drain well.
- In a medium saucepan, combine the wild rice and water. Bring to a boil over high heat, then reduce heat to low and simmer, covered, for 45-50 minutes or until the rice is tender and the water is absorbed.
- While the rice is cooking, heat the olive oil in a small skillet over medium heat. Add the onion and garlic and sauté for 3-5 minutes or until the onion is soft and translucent.
- Add the pumpkin seeds to the skillet and toast for 2-3 minutes, stirring frequently, until lightly browned and fragrant.
- Add the dried cranberries to the skillet and stir to combine.
- When the rice is done cooking, remove it from heat and let it sit, covered, for 10 minutes.
- Fluff the rice with a fork and stir in the onion, garlic, pumpkin seeds, and cranberries.
- Season with salt and pepper to taste.
- Serve warm as a side dish or as a vegetarian main course. Enjoy!
