Wild Rice Pilaf with Pumpkin Seeds


Ingredients:

  • 1 cup wild rice
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1/4 cup pumpkin seeds
  • 1/4 cup dried cranberries
  • Salt and pepper to taste

Instructions:

  1. Rinse the wild rice in cold water and drain well.
  2. In a medium saucepan, combine the wild rice and water. Bring to a boil over high heat, then reduce heat to low and simmer, covered, for 45-50 minutes or until the rice is tender and the water is absorbed.
  3. While the rice is cooking, heat the olive oil in a small skillet over medium heat. Add the onion and garlic and sauté for 3-5 minutes or until the onion is soft and translucent.
  4. Add the pumpkin seeds to the skillet and toast for 2-3 minutes, stirring frequently, until lightly browned and fragrant.
  5. Add the dried cranberries to the skillet and stir to combine.
  6. When the rice is done cooking, remove it from heat and let it sit, covered, for 10 minutes.
  7. Fluff the rice with a fork and stir in the onion, garlic, pumpkin seeds, and cranberries.
  8. Season with salt and pepper to taste.
  9. Serve warm as a side dish or as a vegetarian main course. Enjoy!
