Ingredients for the chicken:

  • 4 boneless, skinless chicken breasts
  • 1 cup plain yogurt
  • 1 tablespoon garam masala
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 2 teaspoons turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • Juice of 1/2 lemon
  • 2 tablespoons vegetable oil

Ingredients for the banana raita:

  • 2 ripe bananas, mashed
  • 1 cup plain Greek yogurt
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, whisk together the yogurt, garam masala, smoked paprika, coriander, cumin, turmeric, salt, cayenne pepper, garlic, ginger, lemon juice, and vegetable oil until well combined.
  2. Add the chicken breasts to the bowl and turn to coat them evenly in the marinade. Cover and refrigerate for at least 2 hours, or overnight if possible.
  3. Preheat your oven to 425°F (220°C). Line a baking sheet with foil and lightly oil it.
  4. Remove the chicken from the marinade and shake off any excess. Place the chicken on the prepared baking sheet and bake for 20-25 minutes, or until cooked through and the internal temperature reaches 165°F (74°C).
  5. While the chicken is cooking, make the banana raita. In a medium bowl, combine the mashed bananas, Greek yogurt, cilantro, cumin, salt, and pepper. Stir until well combined.
  6. Serve the chicken hot with the banana raita on the side. Enjoy!
