Ingredients for the chicken:
- 4 boneless, skinless chicken breasts
- 1 cup plain yogurt
- 1 tablespoon garam masala
- 1 tablespoon smoked paprika
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 2 teaspoons turmeric
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- Juice of 1/2 lemon
- 2 tablespoons vegetable oil
Ingredients for the banana raita:
- 2 ripe bananas, mashed
- 1 cup plain Greek yogurt
- 1/4 cup chopped fresh cilantro
- 1/4 teaspoon ground cumin
- Salt and pepper to taste
Instructions:
- In a large bowl, whisk together the yogurt, garam masala, smoked paprika, coriander, cumin, turmeric, salt, cayenne pepper, garlic, ginger, lemon juice, and vegetable oil until well combined.
- Add the chicken breasts to the bowl and turn to coat them evenly in the marinade. Cover and refrigerate for at least 2 hours, or overnight if possible.
- Preheat your oven to 425°F (220°C). Line a baking sheet with foil and lightly oil it.
- Remove the chicken from the marinade and shake off any excess. Place the chicken on the prepared baking sheet and bake for 20-25 minutes, or until cooked through and the internal temperature reaches 165°F (74°C).
- While the chicken is cooking, make the banana raita. In a medium bowl, combine the mashed bananas, Greek yogurt, cilantro, cumin, salt, and pepper. Stir until well combined.
- Serve the chicken hot with the banana raita on the side. Enjoy!
