Southwestern Meatloaf

Ingredients:
- 1 pound of lean ground beef
- 1/4 cup of bread crumbs
- 1 egg
- 1/4 cup of chopped onion
- 1/4 cup of chopped green pepper
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of cumin
- 1/4 teaspoon of chili powder
- 1/4 teaspoon of garlic powder
- 1/4 cup of salsa
- 1/4 cup of corn kernels
- 1/4 cup of black beans, drained and rinsed
- 1/4 cup of shredded cheddar cheese
Directions:
- Preheat oven to 375°F and lightly grease a loaf pan.
- In a large bowl, mix together the ground beef, bread crumbs, egg, onion, green pepper, salt, pepper, cumin, chili powder and garlic powder until well combined.
- Press half of the mixture into the prepared loaf pan, forming a shallow well in the center.
- Spoon the salsa over the meat mixture, spreading it evenly.
- Sprinkle the corn and black beans over the salsa.
- Top with the cheese.
- Cover with the remaining meat mixture, pressing it firmly to seal the edges.
- Bake for 45 minutes or until cooked through and no longer pink in the center.
