Southwestern Meatloaf

Ingredients:

  • 1 pound of lean ground beef
  • 1/4 cup of bread crumbs
  • 1 egg
  • 1/4 cup of chopped onion
  • 1/4 cup of chopped green pepper

  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of cumin
  • 1/4 teaspoon of chili powder
  • 1/4 teaspoon of garlic powder
  • 1/4 cup of salsa
  • 1/4 cup of corn kernels

  • 1/4 cup of shredded cheddar cheese

Directions:

  • Preheat oven to 375°F and lightly grease a loaf pan.
  • In a large bowl, mix together the ground beef, bread crumbs, egg, onion, green pepper, salt, pepper, cumin, chili powder and garlic powder until well combined.
  • Press half of the mixture into the prepared loaf pan, forming a shallow well in the center.
