Sicilian-Style Broccoli Rabe
Broccoli rabe, also known as rapini, is a leafy green vegetable with a slightly bitter taste. It is a staple in Sicilian cuisine, where it is often cooked with garlic, olive oil, and red pepper flakes. This simple and delicious dish can be served as a side or as a main course with some crusty bread.
To make Sicilian-style broccoli rabe, you will need:
- 1 bunch of broccoli rabe, trimmed and washed
- 4 tablespoons of extra virgin olive oil
- 4 cloves of garlic, peeled and sliced
- 1/4 teaspoon of red pepper flakes, or more to taste
- Salt and black pepper, to taste
- Lemon wedges, for serving
Instructions:
- Bring a large pot of salted water to a boil. Add the broccoli rabe and blanch for about 2 minutes, or until bright green and crisp-tender. Drain well and pat dry with paper towels.
- In a large skillet over medium-high heat, heat the olive oil. Add the garlic and red pepper flakes and cook, stirring occasionally, for about 5 minutes, or until the garlic is golden and fragrant.
- Add the broccoli rabe and toss to coat with the oil and garlic mixture. Season with salt and black pepper to taste. Cook for another 5 minutes, or until the broccoli rabe is tender but still has some bite.
- Transfer to a serving platter and squeeze some lemon juice over the top. Enjoy!
