Sicilian-Style Broccoli Rabe

Broccoli rabe, also known as rapini, is a leafy green vegetable with a slightly bitter taste. It is a staple in Sicilian cuisine, where it is often cooked with garlic, olive oil, and red pepper flakes. This simple and delicious dish can be served as a side or as a main course with some crusty bread.

To make Sicilian-style broccoli rabe, you will need:

  • 1 bunch of broccoli rabe, trimmed and washed
  • 4 tablespoons of extra virgin olive oil
  • 4 cloves of garlic, peeled and sliced
  • 1/4 teaspoon of red pepper flakes, or more to taste
  • Salt and black pepper, to taste
  • Lemon wedges, for serving

Instructions:

  1. Bring a large pot of salted water to a boil. Add the broccoli rabe and blanch for about 2 minutes, or until bright green and crisp-tender. Drain well and pat dry with paper towels.
  2. In a large skillet over medium-high heat, heat the olive oil. Add the garlic and red pepper flakes and cook, stirring occasionally, for about 5 minutes, or until the garlic is golden and fragrant.
  3. Add the broccoli rabe and toss to coat with the oil and garlic mixture. Season with salt and black pepper to taste. Cook for another 5 minutes, or until the broccoli rabe is tender but still has some bite.
  4. Transfer to a serving platter and squeeze some lemon juice over the top. Enjoy!
