Salmon, Snow Pea & Red Potato Salad

To make this salad, you will need the following ingredients:

  • 4 medium red potatoes, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 pound of salmon fillet, skin removed
  • 2 tablespoons of olive oil
  • 2 teaspoons of dried dill
  • 1/4 cup of plain yogurt
  • 2 tablespoons of mayonnaise
  • 2 teaspoons of Dijon mustard
  • 2 tablespoons of chopped fresh parsley
  • 2 cups of snow peas, trimmed and halved
  • 4 cups of baby spinach leaves

To prepare the salad, follow these steps:

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
