Salmon, Snow Pea & Red Potato Salad

To make this salad, you will need the following ingredients:
- 4 medium red potatoes, cut into bite-sized pieces
- Salt and pepper, to taste
- 1 pound of salmon fillet, skin removed
- 2 tablespoons of olive oil
- 2 teaspoons of dried dill
- 1/4 cup of plain yogurt
- 2 tablespoons of mayonnaise
- 2 teaspoons of Dijon mustard
- 2 tablespoons of chopped fresh parsley
- 2 cups of snow peas, trimmed and halved
- 4 cups of baby spinach leaves
To prepare the salad, follow these steps:
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- In a large pot of boiling water, cook the potatoes for about 15 minutes or until tender. Drain and season with salt and pepper.
