Roasted Chicken with Apricots and Rosemary

Ingredients:

  • 1 whole chicken, about 3-4 pounds
  • Salt and pepper
  • 2 tablespoons olive oil
  • 1/2 cup dried apricots, chopped
  • 1/4 cup fresh rosemary, chopped
  • 1 lemon, sliced
  • 4 garlic cloves, sliced
  • 1/2 cup chicken broth

Instructions:

  1. Preheat oven to 375°F.
  2. Season the chicken generously with salt and pepper, inside and out.
  3. In a small bowl, mix together olive oil, chopped apricots, and chopped rosemary. Rub the mixture all over the chicken, getting under the skin if possible.
  4. Place the lemon slices and garlic cloves inside the cavity of the chicken.
  5. Place the chicken in a roasting pan and pour the chicken broth around it.
  6. Roast for 1 hour and 15 minutes, or until the internal temperature of the chicken reaches 165°F.
  7. Remove from the oven and let rest for 10-15 minutes before carving and serving.
