Roasted Beets with Their Greens

Beets are a nutritious and delicious vegetable that can be enjoyed in many ways. One of the simplest and most flavorful methods is to roast them in the oven and serve them with their own greens, which are also edible and tasty. Here is how you can make this easy and satisfying dish.

Ingredients:

  • 1 bunch of beets with greens (about 4 medium beets)
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 2 cloves of garlic, minced
  • 1/4 cup of water
  • 2 teaspoons of lemon juice

Directions:

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Cut off the greens from the beets and wash them well. Chop them coarsely and set aside.
  • Scrub the beets and trim off any roots or stems. Cut them into wedges and place them in a large bowl. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Toss to coat well.
  • Spread the beets in a single layer on the prepared baking sheet. Roast for 40 to 50 minutes, or until tender and caramelized, turning once halfway through.
  • While the beets are roasting, heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the garlic and cook for about 30 seconds, stirring constantly, until fragrant but not browned.
  • Add the beet greens and water and bring to a boil. Reduce the heat and simmer, covered, for about 15 minutes, or until the greens are wilted and tender. Season with salt, pepper and lemon juice to taste.
  • To serve, arrange the roasted beets on a large platter and spoon the beet greens over them. Enjoy hot or at room temperature.
