Roast Pork & Sweet Potato Salad

To make this salad, you’ll need:

  • 1 pound of pork tenderloin
  • Salt and pepper
  • 2 tablespoons of olive oil
  • 4 medium sweet potatoes, peeled and cut into bite-sized pieces
  • 4 cups of baby spinach
  • 1/4 cup of chopped parsley
  • 1/4 cup of apple cider vinegar
  • 2 teaspoons of honey
  • 1 teaspoon of Dijon mustard
  • 1/4 teaspoon of garlic powder

Preheat your oven to 375°F and line a baking sheet with parchment paper. Season the pork tenderloin with salt and pepper and place it on one side of the prepared baking sheet. Drizzle with one tablespoon of olive oil and roast for 25 minutes or until the internal temperature reaches 145°F.

Meanwhile, toss the sweet potatoes with the remaining olive oil and some salt and pepper and spread them on the other side of the baking sheet. Roast for 20 minutes or until fork-tender, flipping halfway through.

In a small bowl, whisk together the vinegar, honey, mustard, garlic powder, and some salt and pepper to make the dressing.
