Roast Pork Salad with Mushrooms & Watercress

To make this salad, you’ll need:
- 1 pound of pork tenderloin
- Salt and pepper to taste
- 2 tablespoons of olive oil
- 1/4 cup of balsamic vinegar
- 2 teaspoons of honey
- 1 garlic clove, minced
- 4 cups of sliced mushrooms
- 4 cups of watercress
- 1 orange, peeled and segmented
First, preheat your oven to 425°F and season the pork with salt and pepper. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, and garlic. Place the pork in a baking dish and pour half of the balsamic mixture over it. Roast for 25 minutes or until the pork is cooked through.
