Roast Pork Salad with Mushrooms & Watercress

To make this salad, you’ll need:

  • 1 pound of pork tenderloin
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 1/4 cup of balsamic vinegar
  • 2 teaspoons of honey
  • 1 garlic clove, minced
  • 4 cups of sliced mushrooms
  • 4 cups of watercress
  • 1 orange, peeled and segmented

First, preheat your oven to 425°F and season the pork with salt and pepper. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, and garlic. Place the pork in a baking dish and pour half of the balsamic mixture over it. Roast for 25 minutes or until the pork is cooked through.

Meanwhile, heat a large skillet over medium-high heat and add the mushrooms. Cook, stirring occasionally, for about 15 minutes or until browned and tender. Season with salt and pepper to taste.

In a large salad bowl, toss the watercress with the remaining balsamic mixture. Add the orange segments and toss gently.
