Quince with Lemon & Honey

Ingredients:

  • 4-5 quinces, peeled, cored and cut into 1/2 inch wedges
  • 1/2 cup honey
  • 1/4 cup water
  • 1 lemon, zested and juiced
  • 1 cinnamon stick
  • 3-4 cloves

Instructions:

  1. Preheat your oven to 375°F.
  2. In a medium-sized baking dish, arrange the quince wedges in a single layer.
  3. In a small saucepan, combine the honey, water, lemon juice and zest, cinnamon stick, and cloves.
  4. Heat the mixture over medium heat, stirring until the honey is completely dissolved.
  5. Pour the mixture over the quince wedges in the baking dish.
  6. Cover the baking dish tightly with foil.
  7. Bake for 45-50 minutes, or until the quince is tender and translucent, stirring once or twice during baking.
  8. Remove the foil from the dish and bake for another 10-15 minutes, until the quince is golden brown and caramelized.
  9. Remove from the oven and let cool slightly.
  10. Serve warm as a side dish or dessert.
