Onion, Mushroom & Bulgur Pilaf

Ingredients:

  • 1 cup bulgur wheat
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1 cup mushrooms, sliced
  • 1 clove garlic, minced
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. Rinse the bulgur wheat in cold water and drain well.
  2. In a medium saucepan, combine the bulgur wheat and water. Bring to a boil over high heat, then reduce heat to low and simmer, covered, for 15-20 minutes or until the bulgur wheat is tender and the water is absorbed.
  3. While the bulgur wheat is cooking, heat the olive oil in a large skillet over medium heat. Add the onion and mushrooms and sauté for 5-7 minutes or until the vegetables are soft and tender.
  4. Add the garlic to the skillet and sauté for an additional 1-2 minutes, stirring frequently.
  5. When the bulgur wheat is done cooking, remove it from heat and let it sit, covered, for 10 minutes.
  6. Fluff the bulgur wheat with a fork and stir in the onion, mushrooms, garlic, and parsley.
  7. Season with salt and pepper to taste.
  8. Serve warm as a side dish or as a vegetarian main course. This dish can also be served cold as a salad.
