Mushroom-Onion Broth
Ingredients:
- 1 large onion, chopped
- 1 pound mushrooms, sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 8 cups water
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the chopped onion and cook for 5-7 minutes, or until the onion is translucent and soft.
- Add the sliced mushrooms and garlic to the pot and continue to cook, stirring occasionally, for another 5-7 minutes, or until the mushrooms have released their liquid and have started to brown.
- Add the water to the pot, along with the dried thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and let the broth simmer for 30-45 minutes.
- Once the broth is done, strain it through a fine mesh strainer, pressing on the solids to extract as much liquid as possible.
- Use the mushroom-onion broth as desired in soups, stews, or other recipes that call for broth.
