Mushroom-Onion Broth

Ingredients:

  • 1 large onion, chopped
  • 1 pound mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 8 cups water
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the chopped onion and cook for 5-7 minutes, or until the onion is translucent and soft.
  3. Add the sliced mushrooms and garlic to the pot and continue to cook, stirring occasionally, for another 5-7 minutes, or until the mushrooms have released their liquid and have started to brown.
  4. Add the water to the pot, along with the dried thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and let the broth simmer for 30-45 minutes.
  5. Once the broth is done, strain it through a fine mesh strainer, pressing on the solids to extract as much liquid as possible.
  6. Use the mushroom-onion broth as desired in soups, stews, or other recipes that call for broth.
