Kasha Varnishkes
Kasha Varnishkes is a traditional Jewish dish made with buckwheat groats, bowtie pasta, onions, and mushrooms. Here’s how to make it:
Ingredients:
- 1 cup buckwheat groats
- 2 cups chicken or vegetable broth
- 1 tablespoon olive oil
- 1 large onion, diced
- 8 ounces mushrooms, sliced
- 8 ounces bowtie pasta
- Salt and pepper to taste
Instructions:
- Rinse the buckwheat groats in a fine-mesh strainer and transfer them to a medium saucepan. Add the broth and bring to a boil over high heat.
- Reduce heat to low, cover the saucepan, and simmer for 15-20 minutes or until the broth is absorbed and the groats are tender.
- While the buckwheat is cooking, cook the pasta according to package instructions in a separate pot. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the onion and sauté for 3-4 minutes or until it begins to soften.
- Add the mushrooms to the skillet and sauté for 5-7 minutes or until they release their moisture and begin to brown.
- When the buckwheat is done cooking, remove it from heat and let it sit, covered, for 10 minutes.
- Fluff the buckwheat with a fork and stir in the pasta and mushroom mixture.
- Season with salt and pepper to taste.
- Serve warm as a side dish or as a vegetarian main course.
Note: Some variations of this dish call for the addition of chopped parsley or roasted garlic for extra flavor.
