Kasha Varnishkes

Kasha Varnishkes is a traditional Jewish dish made with buckwheat groats, bowtie pasta, onions, and mushrooms. Here’s how to make it:

Ingredients:

  • 1 cup buckwheat groats
  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 8 ounces mushrooms, sliced
  • 8 ounces bowtie pasta
  • Salt and pepper to taste

Instructions:

  1. Rinse the buckwheat groats in a fine-mesh strainer and transfer them to a medium saucepan. Add the broth and bring to a boil over high heat.
  2. Reduce heat to low, cover the saucepan, and simmer for 15-20 minutes or until the broth is absorbed and the groats are tender.
  3. While the buckwheat is cooking, cook the pasta according to package instructions in a separate pot. Drain and set aside.
  4. Heat the olive oil in a large skillet over medium heat. Add the onion and sauté for 3-4 minutes or until it begins to soften.
  5. Add the mushrooms to the skillet and sauté for 5-7 minutes or until they release their moisture and begin to brown.
  6. When the buckwheat is done cooking, remove it from heat and let it sit, covered, for 10 minutes.
  7. Fluff the buckwheat with a fork and stir in the pasta and mushroom mixture.
  8. Season with salt and pepper to taste.
  9. Serve warm as a side dish or as a vegetarian main course.

Note: Some variations of this dish call for the addition of chopped parsley or roasted garlic for extra flavor.
