To make green pork chili, you will need the following ingredients:
- 2 pounds of boneless pork shoulder, cut into 1-inch cubes
- Salt and pepper, to taste
- 2 tablespoons of vegetable oil
- 1 onion, chopped
- 4 cloves of garlic, minced
- 2 teaspoons of cumin
- 1 teaspoon of oregano
- 4 cups of chicken broth
- 1 pound of tomatillos, husked and chopped
- 2 cans (4 ounces each) of diced green chilies
- 1/4 cup of chopped cilantro
- Sour cream, shredded cheese, and lime wedges, for serving (optional)
To make green pork chili, follow these steps:
- Season the pork with salt and pepper. In a large pot over medium-high heat, heat the oil and brown the pork in batches, turning occasionally, for about 15 minutes. Transfer the pork to a plate and set aside.
- In the same pot over medium heat, cook the onion, garlic, cumin, and oregano, stirring occasionally, for about 10 minutes, or until the onion is soft.
- Add the chicken broth, tomatillos, green chilies, and cilantro and bring to a boil. Reduce the heat and simmer, uncovered, for about 20 minutes, or until the tomatillos are soft.
- Return the pork and any juices to the pot and simmer, covered, for about an hour, or until the pork is tender.
- Serve hot with sour cream, cheese, lime wedges, and your choice of accompaniments.
Enjoy your green pork chili!
