Ingredients:

  • 2 pounds ripe tomatoes, chopped
  • 1 large cucumber, peeled and chopped
  • 1 red bell pepper, chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 2 slices stale bread, crusts removed and chopped
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons sherry vinegar

  • 2 cups ice-cold water
  • Optional garnishes: chopped herbs (such as basil or cilantro), croutons, chopped avocado

Instructions:

  1. In a large bowl, combine the chopped tomatoes, cucumber, red bell pepper, red onion, and garlic.
  2. Add the chopped bread, olive oil, and sherry vinegar to the bowl.
  3. Season the mixture with salt and pepper to taste.
  4. Using a blender or food processor, puree the mixture until smooth.
  5. While the blender or food processor is running, slowly add the ice-cold water until the soup is the desired consistency.
  6. Chill the soup in the refrigerator for at least 1 hour before serving.
  7. Serve the gazpacho in bowls, and garnish with chopped herbs, croutons, and chopped avocado, if desired.
