Fresh Ginger & Lime Dressing & Marinade

Ingredients:

  • 1/4 cup freshly squeezed lime juice
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1/4 cup olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, whisk together the lime juice, ginger, honey, soy sauce, olive oil, and minced garlic until well combined.
  2. Season with salt and pepper to taste.
  3. Use immediately as a dressing or marinade, or store in a tightly sealed jar in the refrigerator for up to one week.

Notes:

  • This dressing is great on salads, roasted vegetables, grilled chicken or fish, and as a marinade for tofu or vegetables.
  • If you prefer a spicier dressing, add some red pepper flakes or a dash of hot sauce.
