Dill-Caper Dressing
Ingredients:
- 1/2 cup extra-virgin olive oil
- 1/4 cup apple cider vinegar
- 2 tablespoons capers, drained and chopped
- 2 tablespoons chopped fresh dill
- 1 tablespoon Dijon mustard
- 1 garlic clove, minced
- Salt and freshly ground black pepper to taste
Instructions:
- In a small bowl, whisk together the olive oil, apple cider vinegar, capers, dill, mustard, and garlic until well combined.
- Season with salt and pepper to taste, adjusting the amount of vinegar and olive oil as needed.
- Serve the dressing immediately or store in an airtight container in the refrigerator for up to one week.
- Give the dressing a good shake or whisk before using to re-emulsify the ingredients that may have separated.
