Dill-Caper Dressing

Ingredients:

  • 1/2 cup extra-virgin olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons capers, drained and chopped
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • Salt and freshly ground black pepper to taste

Instructions:

  1. In a small bowl, whisk together the olive oil, apple cider vinegar, capers, dill, mustard, and garlic until well combined.
  2. Season with salt and pepper to taste, adjusting the amount of vinegar and olive oil as needed.
  3. Serve the dressing immediately or store in an airtight container in the refrigerator for up to one week.
  4. Give the dressing a good shake or whisk before using to re-emulsify the ingredients that may have separated.
