Creamy Roasted Garlic Dressing
Ingredients:
- 1 head of garlic
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2-3 tablespoons water
Instructions:
- Preheat your oven to 400°F (200°C).
- Cut off the top of the garlic head to expose the cloves, and wrap it in aluminum foil.
- Place the wrapped garlic in the oven and roast for about 40-45 minutes, or until the garlic cloves are soft and tender.
- Remove the garlic from the oven and let it cool.
- In a blender or food processor, add the roasted garlic cloves, mayonnaise, sour cream, olive oil, lemon juice, salt, and black pepper.
- Blend the ingredients until smooth.
- Add 2-3 tablespoons of water to thin the dressing to your desired consistency.
- Taste and adjust the seasoning as needed.
- Store the dressing in an airtight container in the refrigerator for up to 1 week.
