Creamy Roasted Garlic Dressing

Ingredients:

  • 1 head of garlic
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2-3 tablespoons water

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Cut off the top of the garlic head to expose the cloves, and wrap it in aluminum foil.
  3. Place the wrapped garlic in the oven and roast for about 40-45 minutes, or until the garlic cloves are soft and tender.
  4. Remove the garlic from the oven and let it cool.
  5. In a blender or food processor, add the roasted garlic cloves, mayonnaise, sour cream, olive oil, lemon juice, salt, and black pepper.
  6. Blend the ingredients until smooth.
  7. Add 2-3 tablespoons of water to thin the dressing to your desired consistency.
  8. Taste and adjust the seasoning as needed.
  9. Store the dressing in an airtight container in the refrigerator for up to 1 week.
