Cranberry Ginger Applesauce

Cranberry Ginger Applesauce Recipe:

Ingredients:

  • 5 medium apples (a mix of sweet and tart varieties)
  • 1/2 cup fresh or frozen cranberries
  • 1/4 cup brown sugar
  • 1/4 cup water
  • 2 tablespoons fresh ginger, grated
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch of salt

Instructions:

  1. Peel, core, and chop the apples into small pieces.
  2. In a medium saucepan, combine the apples, cranberries, brown sugar, water, ginger, cinnamon, nutmeg, and salt.
  3. Bring the mixture to a simmer over medium heat, then reduce the heat to low and cover the saucepan with a lid.
  4. Cook the applesauce for about 20-25 minutes, stirring occasionally, until the apples are soft and the cranberries have burst.
  5. Remove from heat and let cool slightly.
  6. Using an immersion blender or food processor, puree the mixture until smooth.
  7. Serve warm or chilled.
