Chicken Fettuccine Alfredo
Ingredients:
- 1 pound fettuccine pasta
- 2 boneless, skinless chicken breasts, cut into small pieces
- Salt and pepper
- 2 tablespoons olive oil
- 1/2 cup unsalted butter
- 1 1/2 cups heavy cream
- 2 cups freshly grated Parmesan cheese
- 1/4 teaspoon nutmeg
Instructions:
- Cook fettuccine according to package instructions. Drain and set aside.
- Season chicken with salt and pepper. In a large skillet over medium-high heat, heat the olive oil. Add the chicken and cook until golden brown and cooked through, about 8 minutes. Remove from the pan and set aside.
- In the same skillet, melt the butter over medium heat. Add the heavy cream and whisk together. Slowly add the Parmesan cheese, whisking constantly, until melted and smooth.
- Add the nutmeg and continue to whisk for a few minutes until the sauce thickens slightly.
- Return the chicken to the skillet and stir to coat with the sauce.
- Serve the chicken and sauce over the cooked fettuccine.
