Chicken Fettuccine Alfredo

Ingredients:

  • 1 pound fettuccine pasta
  • 2 boneless, skinless chicken breasts, cut into small pieces
  • Salt and pepper
  • 2 tablespoons olive oil
  • 1/2 cup unsalted butter
  • 1 1/2 cups heavy cream
  • 2 cups freshly grated Parmesan cheese
  • 1/4 teaspoon nutmeg

Instructions:

  1. Cook fettuccine according to package instructions. Drain and set aside.
  2. Season chicken with salt and pepper. In a large skillet over medium-high heat, heat the olive oil. Add the chicken and cook until golden brown and cooked through, about 8 minutes. Remove from the pan and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the heavy cream and whisk together. Slowly add the Parmesan cheese, whisking constantly, until melted and smooth.
  4. Add the nutmeg and continue to whisk for a few minutes until the sauce thickens slightly.
  5. Return the chicken to the skillet and stir to coat with the sauce.
  6. Serve the chicken and sauce over the cooked fettuccine.
