Chicken Fajitas for a Crowd

Ingredients:

  • 2 lbs boneless, skinless chicken breasts, cut into thin strips
  • 2 red bell peppers, sliced
  • 2 green bell peppers, sliced
  • 2 onions, sliced
  • 3 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup vegetable oil
  • 2 tbsp lime juice
  • 2 tbsp chopped fresh cilantro
  • Flour tortillas, for serving

Instructions:

  1. Preheat a large skillet or griddle over medium-high heat.
  2. In a small bowl, mix together the chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper.
  3. In a large bowl, toss together the chicken strips, bell peppers, onions, garlic, vegetable oil, and spice mixture.
  4. Add the chicken mixture to the skillet or griddle, and cook until the chicken is cooked through and the vegetables are tender, about 10-15 minutes.
  5. Remove from heat, and stir in the lime juice and cilantro.
  6. Serve with flour tortillas and your favorite toppings, such as shredded cheese, salsa, sour cream, guacamole, or sliced jalapeños.
