Chicken Fajitas for a Crowd
Ingredients:
- 2 lbs boneless, skinless chicken breasts, cut into thin strips
- 2 red bell peppers, sliced
- 2 green bell peppers, sliced
- 2 onions, sliced
- 3 cloves garlic, minced
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup vegetable oil
- 2 tbsp lime juice
- 2 tbsp chopped fresh cilantro
- Flour tortillas, for serving
Instructions:
- Preheat a large skillet or griddle over medium-high heat.
- In a small bowl, mix together the chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper.
- In a large bowl, toss together the chicken strips, bell peppers, onions, garlic, vegetable oil, and spice mixture.
- Add the chicken mixture to the skillet or griddle, and cook until the chicken is cooked through and the vegetables are tender, about 10-15 minutes.
- Remove from heat, and stir in the lime juice and cilantro.
- Serve with flour tortillas and your favorite toppings, such as shredded cheese, salsa, sour cream, guacamole, or sliced jalapeños.
