Caldo Verde

Caldo Verde is a traditional Portuguese soup that’s hearty, comforting, and full of flavor. It’s made with potatoes, kale, and chorizo, and is perfect for a chilly evening. Here’s how to make it:

Ingredients:

  • 6 cups chicken or vegetable broth
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 4 large potatoes, peeled and diced
  • 1/2 pound chorizo sausage, sliced
  • 1 large bunch kale, stemmed and chopped
  • Salt and pepper, to taste

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic to the pot, and sauté until the onion is soft and translucent, about 5 minutes.
  3. Add the diced potatoes to the pot, and stir to combine.
  4. Pour the chicken or vegetable broth into the pot, and bring the soup to a boil.
  5. Reduce the heat to low, and simmer the soup for 20-25 minutes, or until the potatoes are tender.
  6. While the soup is simmering, brown the chorizo slices in a skillet over medium heat, and set them aside.
  7. Using an immersion blender or a regular blender, puree the soup until it’s smooth.
  8. Return the soup to the pot, and stir in the chopped kale.
  9. Simmer the soup for 5-10 minutes, or until the kale is tender.
  10. Season the soup with salt and pepper to taste.
  11. Ladle the soup into bowls, and top each bowl with a few slices of the browned chorizo.
