Broiled Tuna Salad with Mango Vinaigrette

Ingredients:
- 1 pound of tuna steak
- Salt and pepper to taste
- 1/4 cup of mango nectar
- 2 tablespoons of red wine vinegar
- 1 tablespoon of olive oil
- 2 tablespoons of chopped fresh mint
- 1 can of pinto beans, drained and rinsed
- 1 yellow bell pepper, diced
- 1 cup of cherry tomatoes, halved
- 4 scallions, thinly sliced
- 4 cups of mixed salad greens
Directions:
- Preheat the broiler and season the tuna with salt and pepper. Broil for about 7 minutes, turning once, until the tuna is cooked through and flakes easily. Let it cool slightly and cut into bite-sized pieces.
- In a small bowl, whisk together the mango nectar, vinegar, oil and mint. Season with salt and pepper to taste.
- In a large bowl, toss together the beans, bell pepper, tomatoes and scallions. Add half of the dressing and mix well.
