Baby Bok Choy with Shiitake Mushrooms

Baby bok choy and shiitake mushrooms are a delicious combination that can be cooked in a few simple steps. Here is how to make this healthy and flavorful dish.

Ingredients:

  • 1 pound baby bok choy, rinsed and halved lengthwise
  • 10-15 shiitake mushrooms, halved (about 1 1/2 cups)
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves of garlic, minced
  • 2 tablespoons coconut aminos or soy sauce
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Directions:

  1. Heat oil over medium-high heat in a large skillet or a wok until hot, about 40 seconds to 1 minute. Stir in minced garlic and quickly sauté for 30 seconds or until fragrant.
  2. Add baby bok choy, followed by shiitake mushrooms. Stir frequently until the bok choy starts to wilt, about 3 minutes.
  3. Add coconut aminos or soy sauce and cook and stir until well combined, about 2 minutes. Taste and add salt and pepper to taste if needed.
  4. Sprinkle sesame seeds over the dish if desired. Serve hot with rice or noodles, or enjoy as a side dish.

This recipe serves four people as a side dish or two people as a main dish. You can easily adjust the amount of ingredients according to your preference. You can also add other seasonings such as ginger, red pepper flakes, or fish sauce for more flavor.
