Asparagus with Confetti Dressing
Asparagus is a versatile vegetable that can be enjoyed in many ways. One of my favorite ways to prepare it is with a colorful and tangy confetti dressing. This dressing is made with yogurt, mayonnaise, lemon juice, mustard, and chopped fresh herbs. It adds a burst of flavor and creaminess to the crisp and tender asparagus spears.
To make this dish, you will need:
- 1 pound of asparagus, trimmed and washed
- Salt and pepper to taste
- 1/4 cup of plain yogurt
- 2 tablespoons of mayonnaise
- 1 tablespoon of lemon juice
- 1 teaspoon of Dijon mustard
- 2 tablespoons of chopped fresh parsley
- 1 tablespoon of chopped fresh dill
- 1 tablespoon of chopped fresh chives
To prepare the asparagus, bring a large pot of water to a boil and add some salt. Cook the asparagus for about 4 minutes, or until bright green and crisp-tender. Drain and rinse under cold water to stop the cooking process. Arrange the asparagus on a platter and season with salt and pepper.
To make the confetti dressing, whisk together the yogurt, mayonnaise, lemon juice, mustard, parsley, dill, and chives in a small bowl. Season with salt and pepper to taste.
To serve, drizzle the dressing over the asparagus or serve it on the side. Enjoy this refreshing and healthy dish as a side or a light meal.
